What’s better than regular muffins? STUFFED MUFFINS!!!
You know I’ve been a big fan of stuffing muffins with all sorts of goodness in the past (hello, Peanut Butter and Jelly Muffins!), and recently I was inspired to make a NEW stuffed muffin recipe thanks to my favorite vegan protein bars.
Specifically…the new DIPPED bars from No Cow. They’re the perfect high protein snack when I’m craving something sweet n’ salty…just like the muffin recipe you’re getting today!

I already loved the original bars, but the rich chocolate outer layer that the dipped bars have takes them up to a whole new level of deliciousness. These easy-to-make muffins are perfect for when you’re craving something sweet but want a protein-packed snack to keep you satisfied. The recipe only makes 4 muffins, but feel free to double or triple it to have healthy muffins in your fridge all week long! In addition to being delicious, these vegan muffins are:
Needless to say, these small-batch muffins are the perfect healthy sweet snack to make for the week ahead!

Preheat oven to 350 degrees F. Line a muffin pan with 4 aluminum muffins tins. Let dates soak in warm water for at least 15 minutes.
In a high speed blender (Vitamix preferred), blend dates and water on high until pureed smooth. Add in oat flour, cinnamon, and baking powder and mix until smooth. Add about 2 tbsp of batter into each muffin tin, then press 1/4 of the No Cow Bar into each. Spoon batter over the top to cover up the bar, repeat with all 4 muffins. Top each muffin with chocolate chips.
Bake for 20 minutes. Remove from oven and let cool completely before removing from muffin pan.
